lille is an artisanal bakery in Refshaleøen, Copenhagen. The three owners Jesper, Zara and Mia believe that everyone deserves the best bread. They work with farmers and other craftsmen who understand the importance of an organic and local agriculture, that is produced in harmony with the environment.

The artisans of lille have an admirable attention to detail. Jesper Gøtz wanted the best proofing cloth for his sourdough bread and here linen is the preferred material. He chose to work with Karin Carlander because of their shared beliefs on local and environmental friendly production. Karin Carlander textiles are woven of naturally grown linen and all process are done within Europe by highly skilled craftsmen, a perfect fit for lille.

Jesper has baked with Karin Carlander’s linen textiles since lille opened a year ago and says it is the perfect proofing cloth. We couldn't ask for a better approval - thank you!
